Somewhat dissapointing maiden

Well, I had little time today and thought I will give her a try.
Since I am still trying to figure things out, I used a pair of Graupner 40mm K series props.
Long story short, for the first run I took her in below 1 min. and the motors were hot, like 160*. I know Outrunners tend to run hotter, but this was accompanied by the all too familiar lacquer burning smell. No smoke. ESC was 98*, batteries were barely 90*.
I let it cool down and had another run. Same thing. Now the smell is stronger and the boat feels as if she is hesitating, more like stepping on the gas pedal in a small tiny engined car, there is no build up of speed.
I couldn't get a GPS reading, I think the fastest was mid-40s. (mph)
These are FighterCat 3126/2200kv Outrunners. Per their suggestion, I set my timing at 15*.
Well, I won't chance these motors anymore, good thing i have a pair of Scorpion 3026/1900kv Outrunners I bought from Jason. Scorpion suggests timing between 5-15*, I set at 11.25*, is that OK?
Should I be using even smaller props? like 36 or 38mm props?

Boat gets on plane and is not running excessively wet. No binding in the drive lines...
In goes the Scorpion:DSCN7677.jpg
out comes the FighterCat:DSCN7680.jpg
I wish the kv is a bit higher, hopefully these motors will ultimately swing a bigger prop.
