You connected them through a cap bank it appears which should be great. You have some really long small gauge battery wires is all that really stands out to me. I noticed in your videos you do a lot of part throttle. This is said to be hard on the esc though I have no idea if that has anything to do with causing your issue.

40° water barely went above ambient temperature when reading the data logger and never had any voltage below 37.5 on 10s2pand I do have 6 runs on the boat all data look very consistent 168 A when it was running good.
down to 94 now data logger says 100% throttle

This has got to be frustrating. I probably have about 18 runs on mine (49" Aeromarine Donzi) but I just run 8s with an ABC 2514/3. Pulls around 220A accelerating and levels off around 170A at speed. Not a single issue with the 300SF or 2028 (knock on wood!). My maiden voyage I ran a x455 and it only pulled about 110A planed out.

Not sure if this helps, but discovered the swordfish 300 won't beep a cell count unless you program it to. The default is a 2s and no cell count beep. While not written super clear the manual outlines this. So maybe the esc doesn't recognize the true cell count??

Well looks like I do have a bad ESC didn't know if the motor took it out so I bought a new 2028 800 KV motor and a new swordfish 300
