First time out with my MG lipos on order so borrowed my brothers venom 5000 7 cell nimh batteries. My question is the boat shuts down after about 3 min at most and then when you let off the throttle and try again it will go for about 30sec or so then same thing.

your batteries arent supplying enough power. nimhs do not do well in brushless boats. the thing you can try is to drain or discharge the packs, then charge them at 1 amp. it will take all night but should get you going. you see nimh packs need to be fully drained and charged at a low amperage every now and then to refresh them.

This is terrible advice - DO NOT DO IT!!! If you discharge a pack of nickel cells down all the way, several cells will reverse and be RUINED. NiMH cells do not have 'memory' like NiCd cells did.try this, run them in an rc car or something and KILL them, like drain those suckers way down...
Balance the pack this way - after a run, charge them at 0.25 amps (or as low as your charger will go) and let it run overnight or longer. This will put a full charge into every cell in the pack and is the only way to truly balance a NiMH pack.
Be careful with some of the advice you hear on the Internet. It can cost you.

Jeeze, I can't win.
I try to emphasize something that will cost others money, then I'm called a jerk for doing it. The warning was not meant as a personal affront, but newbies have to be warned to be careful about advice they get on-line. That goes for all of us. Don't take one person's advice as gospel. Research it yourself, get multiple opinions. Most bad info is innocently given, but that doesn't replace damaged equipment.
