Good idea been thinking about this for a long time. I actually bought some aquarium ones but they only go up to 86 degrees, these are way better!

The Venom sensors are small cheap and light and work well. They are accurate and easy to install-best thing in comparison to a temp gun is that it will hold the highest temp recorded which a temp gun will record only after what is there after you bring it back into the shore open the hatch and record.
