I know this might be a dumb and newbie question but how do you locate your boats CG. Why would you need to find it? Why is it important?

If the CG is too far forward, the boat (especially monos) will nose steer/hunt, make pretty bow waves, and suck up power pushing a too-wetted hull through the water. If the CG is too far back the boat may porpoise (AKA the Wah-Wah or Oingo-Boingo) and produce charming blowover/backflips.
In general, here's the "rule of thumb" for the CG from the stern :

Yes, everything in the boat ready to run. The value is usually expressed in percent ahead of the transom. A 100cm boat that balances 30cm ahead of the tramson is said to have its CG at 30%.

I have used a 1" dowel rod. Just roll it back and forth to find you CGComment
