What effect does changing the esc timing have on the motor?

How can one messure the watts (power) and amperes (current) that a motor is drawing from the esc at max throttle? Or do you just measure heat on the motor, battery, esc?

The prop that came with the boat is a D36 P1.4 three blade, to big? what are your suggestions?

I ordered my parts (esc, motor,) from Hobby King, looks like it's going to take up to 45 days to reacieve! I live in canada, does anyone know of a site I can order parts from that is closer to me?

What do you guys think of the Leopard Brushless Motor LBP2860-B/2D-5050KV 120amp, 1300 watts? on a 2c 7.4V battery this would run at 37,370.
