Has anyone ever tried to use a capacitor inbetween the batteries and the esc. How much would it really help?

Most ESC's have adequate capacitors built in on the battery side. Installing additional caps can help, particularly in low voltage (2S), high amp draw applications..... or if your cutoff voltage is set higher than necessary.
