Can I run 5s with the 1521 1.5d and not go over on my amps with a smaller prop?

The short answer is yes. Its assumed with all things being equal other then loading, when you bump up voltage, amperage goes down. Providing you decrease the loading. So by dropping down in prop diameter you should be lowering the amperage draw. Its a generalism, or an assumption. I think I might have aided in confusing you early on by assuming you had no room to up your cell count. Since you have up to 6S capability I wouldnt change out the motor you have available. The 160 amp speedo is a bit on the small size. But it will work.

I am running a 1521/1Y in a 34" 6S hydro and its heavy. Definately heavier then your Cajun. Its Ken Joyes old "Slows" custom hydro with BBY Sponsons. 60 mph reliably using a M447 . Your setup with the 1521/1.5D on 5S should get you where you want to go. Follow the prop recomendations and keep moving forward.
