I know ESC efficiency drops at partial throttle, and I had telemetry temp on board - it was around 130 F at the very few other runs I did. So I thought I was doing a good job. I think water was the culprit with the undetected hull damage.

I have had only one ESC burn up from water in the boat and I left it on all the way around the pond after retrival. sorta rare. I have had several hot setups burn from running 1/2 throttle. Just trying to help

If I repair it I definitely have to rig up a turn fin so I can stay on the power :)

No problem. The repair shouldn't take you much more than an hour and then 24 hours for the epoxy to fully set up.
